This recipe was one of those unintentional surprises! I was hungry and wanted to make avocado toast but wanted to make it special so I took a look at the ingredients I had and decided to fry up and egg and throw the feta on top. Homemade Sun Dried Tomatoes

Sun dried tomatoes are a heavy hitter in the summer. There are tons of recipes out for them right now and tons of ways to enjoy them. But sometimes you have trouble finding them or don’t want to spend the money on a jar at the store. The good news is you can make your own version at home! These come out delicious and I was able to get them to the exact dryness I wanted. Cilantro Lime Cauliflower Rice

As delicious as carbs are, sometimes you need to cut them out. I’m all for moderation so I would never tell you to give up those amazing carbs but if you are looking for a way to get away from the carbs for awhile then this recipe for Cilantro Lime Cauliflower Rice is perfect. I used a bag of pre-made rice that I bought. You can find already made rice here. However, if you want to make your own it is very easy. Just take one large cauliflower and break it into florets. Rinse them well and pat dry. Then place them into a food processor and pulse until it’s the consistency of rice. Then you are ready to go!
