Sun dried tomatoes are a heavy hitter in the summer. There are tons of recipes out for them right now and tons of ways to enjoy them. But sometimes you have trouble finding them or don’t want to spend the money on a jar at the store. The good news is you can make your own version at home! These come out delicious and I was able to get them to the exact dryness I wanted. Now I know these are technically “sun-dried” but it’s quicker and cheaper than the original way.
Ingredients:
1 large container cherry tomatoes
Salt and pepper
1 tablespoon chopped thyme
1 tablespoon chopped rosemary
2 tablespoons olive oil
Instructions:
1) Preheat oven to 200 degrees.
2) Cut tomatoes in half and place cut side up on a foil lined baking sheet.
3) Drizzle with olive oil and sprinkle salt, pepper, thyme and rosemary all over.
4) Bake for 2-4 hours. Check the tomatoes at the 2 hours mark and leave in until they are at the dried out consistency you want. They should have a raisin like texture.
If you are not using them all immediately and want to save them for the future, get a clean airtight glass jar (these are perfect) and add them. Then pour in just enough olive oil to cover them.
