Cinnamon Apple Topping

This is a fun and easy cinnamon apple dessert topping that adds comfort to a variety of dishes.  The key to this recipe is the quality of the apples.  We’re recommending slightly under ripe granny smith apples to give this dish a slight crunchy texture to compliment the softer cake or ice cream that this could top. The added flavors come from the cinnamon, cloves and a little zest from lemon juice.  Again, try to grind your own fresh cloves and cinnamon to give your sense of smell a nice pop.  If all you have is store bought ground spices just add a touch more to the recipe for the same effect.  The combination of cinnamon apple and heated sauce adds warmth and crispness to your favorite dessert base, cutting the chill of an early spring evening. You could even add this topping to pancakes for a special Sunday breakfast!

Ingredients:

2 granny smith apples, peeled, cored & sliced

2 Tbsp butter

2-1/2 Tbsp lemon juice

3 to 4 Tbsp brown sugar

3 to 4 Tbsp white sugar

1-1/2 to 2 tsp cinnamon (depending on how much you like cinnamon)

1/4 tsp ground cloves

 

Method:

Melt butter over medium heat in large non-stick skillet

Add sliced apples, stirring to coat with butter. Cover. Stir occasionally.

When apples have softened and liquid has mostly dissipated, add lemon juice. Cook to reduce liquid

Add sugars and heat through

Add cinnamon and cloves and stir to coat the apples

Remove from heat and while still warm, scoop over a thick slice of pound cake, or if you’re like me and adore ice cream, top over a scoop of cool crisp all natural vanilla or decadent butter pecan ice cream.

Homemade Blueberry Sauce

If you were here for my Breakfast Tacos post, you know that February is National Hot Breakfast Month so I’ve been having lots of yummy dinners, including nice crispy waffles! If you don’t have a waffle iron, you can use your George Forman grill and get some nice and quick. Nothing beats a nice warm fruit sauce and this Homemade Blueberry Sauce is just the thing to make your waffles or pancakes taste even better! Easy Rice Pudding

We don’t do a ton of dessert around here only because we are usually pretty full from dinner but when my husband mentioned that it had been awhile since he had rice pudding, I knew I had to make him some. I played around with a few recipes but this one is called Easy Rice Pudding for a reason, because it was super easy and it came out the best. It was the perfect level of creamy and sweet. All of the ingredients blended together perfectly and you will love it. If you are on the fence about trying to make it yourself, then this is the best starter recipe.
