Who doesn’t love a quesadilla? They are easy to make and you can fill them with anything! These BBQ Chicken Quesadillas are amazingly easy to make and so delicious! Everyone loves an easy chicken recipe! That’s why this BBQ Cheddar Chicken recipe is perfect because it’s packed with tons of flavor yet it’s still easy to put together. I used Sweet Baby Ray’s sauce because I love it, however if you have a brand of sauce that you really love or you want to add even more heat to this, then feel free to use your preferred brand. If you don’t have a basting brush, you should definitely invest because it makes adding sauce so much easier! I like this one here. This recipe is the perfect mix of tangy, sweet and spicy! We made these on one of our last warm weekends and they were perfect. The chicken cooked up with a nice char and the peppers and sauce added a ton of flavor. We really loved the way that these came out and had zero leftovers for this meal! It’s been a crazy busy last few weeks! I started a new job and this never ending winter has been sucking my energy levels. But I have been working on some new recipes. I got inspired by this great BBQ brisket recipe from A Family Feast (see here). I tweaked it slightly and made it one Saturday in the crock pot. It came out fantastic, so good in fact that I had to kick my husband out of the kitchen because he kept sneaking bites. I felt like the mom in “A Christmas Story” with the turkey. I learned two things: one, I will be making this again and two, I need to buy a bigger brisket because 2 pounds wasn’t enough!
