Crockpot Chicken Thighs and Potatoes

I love super easy recipes and this one for Crockpot Chicken Thighs and Potatoes couldn’t be better. The crockpot does most of the work and the sear on the chicken thighs before you put them in makes the chicken get an awesome flavor that matches perfectly with the garlicky potatoes. This is a great option for a mid-week meal. You can have a delicious dinner waiting for you when you get home! Who doesn’t love that kind of ease?  Continue reading “Crockpot Chicken Thighs and Potatoes”

Crockpot Baked Potatoes

Vegetarian

I love baked potatoes! Especially Crockpot Baked Potatoes! They are an easy side dish that can be filled with anything! Sometimes though, they can hold up your dinner if they don’t cook long enough in the oven. If you want to take that worry away, you can make them right in your crockpot! They come out soft and delicious and you don’t have to worry about timing them around your main course. You let them slow cook away and they will be ready just in time. They will also save you on oven space since these will be cooked elsewhere. All you need to get ready is all of your favorite toppings, you can watch the butter and cheese melt right in and your ready to eat!  Continue reading “Crockpot Baked Potatoes”

The best part about this is that the chicken slow cooks all day so the most labor intensive part is shredding the chicken!  Continue reading “Layered Chicken Enchiladas”

Crockpot Philly Chicken Cheesesteak Sandwiches

Crockpot Philly Chicken Cheesesteak Sandwiches

Now that fall is here, my crockpot is getting used more and more. This is a great recipe to make for a busy day or if you are feeding a group and want something nice and easy. You can make this for Sunday football and have it ready by the 4 pm game with no problems! I used provolone for the cheese but you can absolutely mix it up and use something different if you want. Some American, Sliced Pepper Jack or some sharp cheddar would all work well with this! I cut right into the middle of the roll to make a little sandwich boat, which helped hold all the yummy goodness inside. Continue reading “Crockpot Philly Chicken Cheesesteak Sandwiches”
