I love me some grilled cheese. There are so many different ways to make it. You can go traditional or crazy by mixing up the ingredients. Today’s recipe, peach and Brie grilled, is a sandwich full of flavor. Using Panettone bread makes a huge difference.
I love how this Fried Eggplant Parmesan comes out. It takes a little bit more prep work but it really makes for a delicious meal. Eating healthy can get very boring sometimes because you feel like you are in a rut with options but luckily these Vegetarian Stuffed Peppers are not only great for you, they are delicious! I used my Spicy Bean and Corn Salad as the filling for this and it worked perfectly! If you have another version you like, feel free to use that one. I recently got a bag of apples and needed something to do with them since I knew we wouldn’t eat all of them before they went bad so I decided to make some applesauce. I used some Connecticut grown Cortland apples which gave the sauce a very apple cider like taste, which was fantastic!
