This is such a delicious way to prepare mahi mahi, it’s so easy and flavorful! This grills up nice and quick and goes perfectly with the salad. My husband and I had a kid free night a few weeks back and decided to stay home and have a night of cooking things that we always want to try but our children would never let us hear the end of for making it. I used frozen filets and just let them thaw till it was time to grill. You can also prep the salad ahead of time and put in the fridge till it’s time to eat. For something so easy, it tasted absolutely amazing! I love caesar salad! It’s one of my most favorite things in the world. I love the tangy dressing, the croutons and just the overall flavor. Lets be honest, this is a salad that can make you love salad.  This version is delicious because it takes crisp asparagus and tops it with some caesar goodness! This is a great side dish option or even as a meal itself! I went simple with this but you can absolutely top with some shredded parmesan for a little extra kick!

Sometimes you just need a go-to chicken recipe. There are lots of recipes that ask for cooked chicken and this is the perfect way to cook it up ahead of time to have ready. This is also a great recipe to have for an easy dinner. This comes out cooked to perfection, moist and flavorful. This is easy and quick to make so it’s a perfect weeknight dish to throw together with some Roasted Green Beans or Roasted Red Potatoes. I call it a Kitchen Sink Frittata because you don’t have to follow this recipe exactly, it’s can work with whatever you have available! Some leftover taco meat? Toss it in. A random mushroom or zucchini? Chop it up and throw it in. Everything but the kitchen sink applies here.
