This is such a delicious way to prepare mahi mahi, it’s so easy and flavorful! This grills up nice and quick and goes perfectly with the salad. My husband and I had a kid free night a few weeks back and decided to stay home and have a night of cooking things that we always want to try but our children would never let us hear the end of for making it. I used frozen filets and just let them thaw till it was time to grill. You can also prep the salad ahead of time and put in the fridge till it’s time to eat. For something so easy, it tasted absolutely amazing! I practically inhaled the whole plate and wished I made more because it was that good!

1) Combine all the salsa ingredients in a bowl and chill till ready to eat.
2) Heat grill to medium high.
