My love of mashed potatoes is pretty big. But, as you can see by my Perfect Mashed Potatoes recipe, the prep work for homemade mashed potatoes is a little time intensive. I loved making these because they are insanely easy. This is perfect if you don’t want to peel potatoes as you just add the potatoes as is. I actually recommend doing that because the skins gave the potatoes this awesome texture. I’ve been loving making fresh sauce for my pasta! There is something about eating something fresh out of a pan as opposed to opening a jar. This makes great use of fresh sauce, it’s a nice garlicy and cheesy mix that coats the seasoned chicken and fresh asparagus so well.
