My love of mashed potatoes is pretty big. But, as you can see by my Perfect Mashed Potatoes recipe, the prep work for homemade mashed potatoes is a little time intensive. I loved making these because they are insanely easy. This is perfect if you don’t want to peel potatoes as you just add the potatoes as is. I actually recommend doing that because the skins gave the potatoes this awesome texture. This is a perfect side dish for a long roast as it slow cooks in the crockpot and just needs to be mashed up and it’s ready to go!
Ingredients:
2 lbs red potatoes, quartered
4 tablespoons butter
1 clove garlic, chopped
1/2 cup sour cream
1/3 cup whole milk
Salt and pepper to taste
Instructions:
1) Add potatoes, butter and garlic to crockpot. Seal and cook for 3-4 hours on high or 5-6 hours on low.
2) Remove lid and add sour cream, milk, salt and pepper. Use a hand mixer or potato masher to blend everything together. I used a hand mixer and it made the potatoes nice and fluffy.
