Taco Stuffed Avocados

I love tacos! They are just so yummy and there are so many ways you can switch them up. I also am completely obsessed with avocados so the idea to stuff my two favorites together was just too good. Grilled Mahi Mahi with Corn and Avocado Salad

Grilled Mahi Mahi with Corn and Avocado Salad

My husband and I had a kid free night a few weeks back and decided to stay home and have a night of cooking things that we always want to try but our children would never let us hear the end of for making it. I used frozen filets and just let them thaw till it was time to grill. You can also prep the salad ahead of time and put in the fridge till it’s time to eat. For something so easy, it tasted absolutely amazing! I practically inhaled the whole plate and wished I made more because it was that good!  Continue reading “Grilled Mahi Mahi with Corn and Avocado Salad”

Beer Marinated Chicken Wings

Beer Marinated Chicken Wings-2

One of the best things about summer is the ability to put your grill to good use! Living in the northeast, the grill gets retired for a portion of the year so we really take advantage when the opportunity arises! These wings are a perfect thing for a grill night. The marinade makes the wings moist and flavorful and a great addition for any BBQ! I used Bud Light Lime for this as it added a little extra lime flavor, I would recommend a light beer like that, a Corona works too.  Continue reading “Beer Marinated Chicken Wings”
