Copycat Panera Mac and Cheese

Vegetarian

I try not to eat a lot of fast food but sometimes when I want a quick meal I will run to Panera Bread and pick something up. One of my favorites is their mac and cheese! It’s incredibly creamy and totally worth the trip. I have found a way to get this wonderful dish at home with this easy recipe. One ingredient that you really need is some really good sharp white cheddar. I love the Cracker Barrel brand, you can find it here. Having it freshly grated also really helps it melt and become super creamy. This comes out so good and reheats well the next day too!  Continue reading “Copycat Panera Mac and Cheese”

Bacon and Tomato Rotini

A great pasta recipe is a must have for a busy night, luckily this Bacon and Tomato Rotini is just the thing! You can have it on the table in less than a half hour and it will make everyone happy with it’s mix of cheese, garlic, bacon and tomatoes! I used the rotini for this since the rolls helped the olive oil and garlic mix to really stick to the pasta and hold onto the flavor. This is a must try for any night of the week!  Continue reading “Bacon and Tomato Rotini”

Caprese Lasagna

I am loving making everything caprese lately! The mix of mozzarella, basil and tomatoes is absolutely delicious! I’ve also been really into balsamic vinegar lately too so adding it to this recipe was just an explosion of flavor that made this a recipe that didn’t last long. I highly recommend this for a big Sunday dinner! I included instructions to make a balsamic glaze yourself but if you want to skip that step, you can get some pre-made glaze hereContinue reading “Caprese Lasagna”

Beef and Chorizo Chili

Beef and Chorizo Chili

Anyone who follows me on Instagram knows that I participated in a charity chili cookoff last weekend. It was a great time and helped raise a lot of money to benefit the Exchange Club Parenting Skills Center in Stamford, CT which helps end child abuse. I unfortunately didn’t win the cookoff but received a lot of rave reviews on my chili, a Beef and Chorizo Chili! This was packed with flavor and not an overwhelming amount of spice! A must try! Now I made about 25 pounds for the contest, which is a ton of chili, so I took my measurements and cut them by about 2/3 so it’s a much more manageable amount.  Continue reading “Beef and Chorizo Chili”

Sweet and Sour Pork Chops

I absolutely loved how these pork chops came out! They were full of flavor and cooked to perfection. The sauce gave the meat an extra something without overwhelming the meat. You should defiantly try this out! Continue reading “Sweet and Sour Pork Chops”
