I love making asparagus as it is so easy to prepare and use for so much. I usually make Parmesan Roasted Asparagus and it always comes out perfect but asparagus is one of my husband’s favorite sides and when he came home from the store with a big batch of fresh asparagus and some lemons, I knew exactly what he was looking for. Lemon is a great summer fruit because it gives a freshness to everything and it goes perfectly with garlic so you know that this is a match. Tomato Alfredo Ziti Bake

Well after a nice week in Florida, it’s back to business! I’m coming to you today after starting a new job so super easy dinners with no prep are really in my wheelhouse right now. This is a beyond easy recipe. It’s literally boiling and mixing. You can use canned sauce for this if you want but I make my own and I found it really makes the flavor incredible. Chicken and Zucchini Stir Fry

Summer means zucchini season. Whenever I go to the grocery store, they are practically giving them away because there are so many being grown. If you grow your own, you get to the point where you are doing everything you can to use them up. From Zucchini Bread to Zucchini Chips, you use what you can. Caramelized Pork

I scored at the grocery store and ended up with a ton of pork butt for a great price. Now I had to figure out what to do with it. I could do the classic Pulled Pork but I wanted to switch it up. I had seen caramelized pork with a more Asian twist but as I am not super knowledgeable in Asian themed cooking, I mixed it up and tried it out my way. I didn’t have fish sauce or coconut water but I used some chili powder and garlic to give the meat some flavor to blend with the sweet caramel.
