I love making asparagus as it is so easy to prepare and use for so much. I usually make Parmesan Roasted Asparagus and it always comes out perfect but asparagus is one of my husband’s favorite sides and when he came home from the store with a big batch of fresh asparagus and some lemons, I knew exactly what he was looking for. Lemon is a great summer fruit because it gives a freshness to everything and it goes perfectly with garlic so you know that this is a match. This is a great summer side for any meal.
Ingredients:
1/2 lb fresh asparagus, trimmed
1 tablespoon olive oil
2 cloves garlic, minced
2 tablespoons grated parmesan
1/2 lemon, thinly sliced
2 tablespoons lemon juice
Salt and pepper
Instructions:
1) Preheat oven to 400 degrees F. Line a baking sheet with foil.
2) Line up asparagus on pan. Add olive oil, lemon juice, salt, pepper, garlic and parmesan and toss to coat.
3) Top with lemon slices and roast for 8-10 minutes.
