This is a deliciously fresh side. Full of flavor and still light enough to not overpower the main course! It’s easy and thanks to all the seasonings, it’s a great way to use up any leftover zucchini from your garden and make it easy for you kids to try some vegetables. This Sautéed Zucchini and Corn is a perfect side dish all year round!
Ingredients:
2 tablespoons olive oil
2 garlic cloves, chopped
2 zucchinis, chopped and quartered
1 cup frozen corn kernels
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon thyme
Salt and pepper
2 teaspoons lime juice
2 tablespoons grated Parmesan
Instructions:
1) Heat olive oil in skillet over medium high heat. Add garlic and cook for 1 minute till fragrant.
2) Add zucchini, corn, basil, oregano and thyme. Cook and stir until zucchini is tender, about 4 minutes. Add salt, pepper and lime juice. Stir and cook for another minute.
3) Remove from heat. Sprinkle parmesan on top, stir and serve.
