Grilled Mahi Mahi with Corn and Avocado Salad

This is such a delicious way to prepare mahi mahi, it’s so easy and flavorful! This grills up nice and quick and goes perfectly with the salad. My husband and I had a kid free night a few weeks back and decided to stay home and have a night of cooking things that we always want to try but our children would never let us hear the end of for making it. I used frozen filets and just let them thaw till it was time to grill. You can also prep the salad ahead of time and put in the fridge till it’s time to eat. For something so easy, it tasted absolutely amazing! One of the best things about summer is the ability to put your grill to good use! Living in the northeast, the grill gets retired for a portion of the year so we really take advantage when the opportunity arises! These wings are a perfect thing for a grill night. The marinade makes the wings moist and flavorful and a great addition for any BBQ! Now that it’s summer, a great salad is much appreciated! Now you can chop up some tomatoes and cucumbers and throw them on some lettuce or you can make. a. salad! This is delicious and hearty, which means you won’t feel hungry an hour later! Plus it’s full of protein and veggies so it is amazing for you too! I loved this salad but my only complaint was it didn’t last very long! We went through it pretty quick because not only was it so delicious, it also goes well with a variety of dressings. I’m a creamy fan (thousand island, ranch, blue cheese, etc) and my husband is an Italian dressing guy so knowing that it was equally delicious made it even better! So I think we can all agree that kielbasa is pretty amazing. But anyway to improve it can’t hurt right? This recipe is very easy as it goes right into the crockpot and the end result is delicious! This is literally and slice and whisk recipe. You slice the kielbasa and whisk the sauce. Easy right? You can set this up and even just bring your crockpot with your for less issues.
