BBQ Beef Brisket

BBQ Beef Brisket

It’s been a crazy busy last few weeks! I started a new job and this never ending winter has been sucking my energy levels. But I have been working on some new recipes. I got inspired by this great BBQ brisket recipe from A Family Feast (see here). I tweaked it slightly and made it one Saturday in the crock pot. It came out fantastic, so good in fact that I had to kick my husband out of the kitchen because he kept sneaking bites. I felt like the mom in “A Christmas Story” with the turkey. I learned two things: one, I will be making this again and two, I need to buy a bigger brisket because 2 pounds wasn’t enough! This has become a new favorite around my house, even my toddlers eat it up.

Ingredients:

3 pounds beef brisket

1 teaspoon each salt and pepper

2 tablespoons cooking oil

2 cups diced white onion

1 6 oz jar tomato paste

1/2 cup Makers Mark Bourbon (or personal favorite brand)

1 cup regular Coca Cola

1/2 cup ketchup

2 tablespoon white vinegar

1/2 cup beef stock

1/2 cup brown sugar

2 tablespoon honey dijon mustard

2 tablespoons molasses

2 tablespoons Worcestershire sauce

2 tablespoons liquid smoke (see here)

1 tablespoon hot sauce

Instructions:

1) Put dutch oven on stove on high and add oil. Lightly pat down brisket, season with salt and pepper and place in dutch oven once oil is hot. Cook on both sides for 5 minutes and then place into crockpot.

2) Lower heat to medium high and add onions. Cook for 1 minute and add paste. Stir until well combined.

3) Add bourbon and scrape up beef bits while deglazing. Let simmer until liquid is reduced slightly, then add the rest of the ingredients. Lower heat slightly and let simmer for about 5 minutes.

4) Pour liquid over beef in crockpot and cook for 6 hours on high or 10 hours on low. The meat should be tender and ready to serve when you remove it from the crockpot. Serve alone or on a roll with some sharp cheddar.
