Who doesn’t love a quesadilla? They are easy to make and you can fill them with anything! These BBQ Chicken Quesadillas are amazingly easy to make and so delicious! I use my current favorite sauce, see here, but you can use any kind you like. If you want to make your own, check out this recipe for Homemade BBQ Sauce! No matter what you use, the tangy flavor of the sauce will make these quesadillas delicious!
Ingredients:
1/2 lb shredded chicken breast
1/2 cup BBQ sauce
Salt and pepper
1 cup shredded cheddar
3 flour tortillas
1/2 avocado
2 tablespoons olive oil
Instructions:
1) If you do not have pre-shredded chicken, place into a crockpot with a 1/2 cup of chicken broth and cook on high for 4 hours till tender, then shred.
2) In a large bowl, mix chicken and BBQ sauce until well combined.
3) Set a skillet on medium high and add olive oil. Place a tortilla into the pan, add a layer of cheese. Spoon in some of the chicken mixture and top with more cheese.
4) Fold tortilla in half and cook for about 5 minutes, flipping halfway through. Top with avocado slices and serve.
