Caesar Salad Asparagus

I love caesar salad! It’s one of my most favorite things in the world. I love the tangy dressing, the croutons and just the overall flavor. Lets be honest, this is a salad that can make you love salad.  This version is delicious because it takes crisp asparagus and tops it with some caesar goodness! This is a great side dish option or even as a meal itself! I went simple with this but you can absolutely top with some shredded parmesan for a little extra kick!

But if you love Caesar and want to get out of the rut, this is a way to liven it up!

Who doesn’t love potatoes? This recipe is extra amazing because it’s full of flavor and you can make it all in one pan. I lined my baking sheet with foil and I didn’t even have to wash anything. I don’t have a dishwasher so I’m always down for less dishes to wash. Happy March! I love this time of year, it gets warmer and spring starts to show itself and best of all, it’s St. Patrick’s Day! My love of mashed potatoes is pretty big. But, as you can see by my Perfect Mashed Potatoes recipe, the prep work for homemade mashed potatoes is a little time intensive. I loved making these because they are insanely easy. This is perfect if you don’t want to peel potatoes as you just add the potatoes as is. I actually recommend doing that because the skins gave the potatoes this awesome texture.
