Eating healthy can get very boring sometimes because you feel like you are in a rut  with options but luckily these Vegetarian Stuffed Peppers are not only great for you, they are delicious! I used my Spicy Bean and Corn Salad as the filling for this and it worked perfectly! If you have another version you like, feel free to use that one. This is also full of brown rice so you have tons of healthy carbs. This is a great way to eat healthy! Happy June! Summer is finally here and now it’s time for some really light but delicious meals. You don’t want a super heavy dish when it’s hot outside so this Chicken Cobb Salad is the perfect thing. The chicken and egg packs it full of protein without weighing you down and the avocado gives you a boost of healthy fat along with the vegetables giving you the freshness you crave. You can top this with whatever dressing that you want but an avocado ranch would be fantastic, I love this brand because it’s not loaded with extra sugar and won’t ruin all the healthy perks of the salad. Hard boiled eggs are a food item with many different uses. It’s an easy way to get protein in the morning, they are huge on Easter and they are a vital ingredient on a Cobb salad! They are also the main star of egg salad and of course, a party favorite, deviled eggs! Beef and Chorizo Chili

Beef and Chorizo Chili

Anyone who follows me on Instagram knows that I participated in a charity chili cookoff last weekend. It was a great time and helped raise a lot of money to benefit the Exchange Club Parenting Skills Center in Stamford, CT which helps end child abuse. I unfortunately didn’t win the cookoff but received a lot of rave reviews on my chili, a Beef and Chorizo Chili! This was packed with flavor and not an overwhelming amount of spice! A must try! Now I made about 25 pounds for the contest, which is a ton of chili, so I took my measurements and cut them by about 2/3 so it’s a much more manageable amount.  Continue reading “Beef and Chorizo Chili”
