I love super easy recipes and this one for Crockpot Chicken Thighs and Potatoes couldn’t be better. The crockpot does most of the work and the sear on the chicken thighs before you put them in makes the chicken get an awesome flavor that matches perfectly with the garlicky potatoes. This is a great option for a mid-week meal. You can have a delicious dinner waiting for you when you get home! Who doesn’t love that kind of ease?
Ingredients:
4 bone-in chicken thighs with the skin on
1/4 teaspoon basil
1/4 teaspoon oregano
Salt and pepper
1 tablespoon butter
1 lb red potatoes, quartered
1 tablespoon olive oil
2 cloves garlic, minced
1/2 cup grated Parmesan
Instructions:
1) Season the chicken with the basil, oregano, salt and pepper.
2) Melt the butter in a large skillet on medium high. Sear both sides of the chicken for a few minutes.
3) Add the potatoes to a large bowl and add the olive oil and garlic. Toss a few times to coat and pour into your crockpot. Place the chicken on top and close.
4) Cook on high for 4 hours or low for 8 hours. Scoop onto a plate and top with Parmesan before serving.
