Anyone who follows me on Instagram knows that I participated in a charity chili cookoff last weekend. It was a great time and helped raise a lot of money to benefit the Exchange Club Parenting Skills Center in Stamford, CT which helps end child abuse. I unfortunately didn’t win the cookoff but received a lot of rave reviews on my chili, a Beef and Chorizo Chili! This was packed with flavor and not an overwhelming amount of spice! A must try! Now I made about 25 pounds for the contest, which is a ton of chili, so I took my measurements and cut them by about 2/3 so it’s a much more manageable amount.  Continue reading “Beef and Chorizo Chili”

There is something about having a delicious snack when relaxing in front of the TV and this Easy Chili Dip is the perfect thing whether you are catching up on your favorite show, binging on streaming television or watching the game. It’s creamy and delicious and almost impossible to stop at just one bite! This is a perfect last minute dish to add to your table if you are having a last minute party. I have been eating this dip since college, it was one of the few things we turned the oven on for and it was always worth it. Hearty Beef Chili

There are some foods that can go with anything. Chili is a great dish because you can always mix it up however you want! You can have chicken, vegetarian, etc. This Hearty Beef Chili is a great version because you can prep it easily and let it cook all day while you do other stuff and it will be ready to chow down when you are! If you want to let this simmer on the stove instead, just follow the instructions and put it in a soup pot on low to cook nice and thick for you. I prefer to top with cheddar cheese and sour cream but you can use whatever you want; jalapeños, use a piece of Honey Cornbread for dipping, anything goes!  Continue reading “Hearty Beef Chili”
