Tacos are a miracle food and stuffing other things with tacos are even better! This is a vegetarian taco that’s full of flavor along with being full of fiber and other healthy stuff. This helps curb your craving without throwing you off too much. These are stuffed with black beans, avocado and of course sweet potato. You don’t have to use the sour cream but I add a little bit of extra yummy on top! You can also keep the extra sweet potato and save it for a side for another meal. [Read more…]

This recipe is the perfect mix of tangy, sweet and spicy! We made these on one of our last warm weekends and they were perfect. The chicken cooked up with a nice char and the peppers and sauce added a ton of flavor. We really loved the way that these came out and had zero leftovers for this meal! These were cooked on medium low heat directly on the grill. If you use a grill pan on your stove, make sure you keep an eye on them so they don’t burn. [Read more…]

This is such a delicious way to prepare mahi mahi, it’s so easy and flavorful! This grills up nice and quick and goes perfectly with the salad. My husband and I had a kid free night a few weeks back and decided to stay home and have a night of cooking things that we always want to try but our children would never let us hear the end of for making it. I used frozen filets and just let them thaw till it was time to grill. You can also prep the salad ahead of time and put in the fridge till it’s time to eat. For something so easy, it tasted absolutely amazing! I practically inhaled the whole plate and wished I made more because it was that good! [Read more…]
One of the best things about summer is the ability to put your grill to good use! Living in the northeast, the grill gets retired for a portion of the year so we really take advantage when the opportunity arises! These wings are a perfect thing for a grill night. The marinade makes the wings moist and flavorful and a great addition for any BBQ! I used Bud Light Lime for this as it added a little extra lime flavor, I would recommend a light beer like that, a Corona works too. [Read more…]
I love potatoes! I can eat them any way imaginable which is why I’m all about making new creations with them. I saw a recipe for a classic potato salad recipe and decided to liven it up a bit and mix it with another classic, the mashed potatoes. This version is tangy and hearty, definitely something to keep in your back pocket! This takes this recipe beyond the BBQ. [Read more…]
Now that it’s summer, a great salad is much appreciated! Now you can chop up some tomatoes and cucumbers and throw them on some lettuce or you can make. a. salad! This is delicious and hearty, which means you won’t feel hungry an hour later! Plus it’s full of protein and veggies so it is amazing for you too! I loved this salad but my only complaint was it didn’t last very long! We went through it pretty quick because not only was it so delicious, it also goes well with a variety of dressings. I’m a creamy fan (thousand island, ranch, blue cheese, etc) and my husband is an Italian dressing guy so knowing that it was equally delicious made it even better! Even better, you can double up on the marinade and use that for an awesome honey mustard dressing on top! [Read more…]
So I think we can all agree that kielbasa is pretty amazing. But anyway to improve it can’t hurt right? This recipe is very easy as it goes right into the crockpot and the end result is delicious! This is literally and slice and whisk recipe. You slice the kielbasa and whisk the sauce. Easy right? You can set this up and even just bring your crockpot with your for less issues.
This is a great potluck recipe, a wedding or baby shower and any other get together where it’s finger food/appetizer only. The glaze coats the kielbasa perfectly and gives it great flavor! [Read more…]
