I know that eating healthy can get really boring really quick, but this Cilantro Lime Chicken with Cauliflower Rice is a great way to enjoy a meal without feeling like you are missing out. It’s low on carbs thanks to the cauliflower, it’s full of fiber with the black beans and you get your protein fix with the chicken! The cilantro lime flavor permeates through the whole dish and makes it so hard to put down.
Ingredients:
2 tablespoons olive oil, divided
1/2 lb boneless, skinless chicken breast, cut into cubes
Salt and pepper
1 lime, juiced
1/4 cup cilantro, chopped
1/4 white onion, diced
2 cloves garlic, minced
12 oz cauliflower rice (see here)
16 oz black beans, drained
1 tablespoon Cajun seasoning
Instructions:
1) Add 1 tablespoon oil to large skillet and heat to medium high heat. Add chicken. Season with salt and pepper and cook until golden brown and cooked throughly.
2) Add lime juice and cilantro, mix well. Remove chicken from pan and set aside.
3) Add remaining oil to pan and add onion. Sauté until onion turns transparent. Add garlic and sauté for another minute.
4) Add cauliflower, black beans and Cajun seasoning. Cook until cauliflower is soft and serve immediately.
