Skillet Tuna Penne

My husband is a huge tuna fan so it’s a staple on my shopping list. He usually just throws it together and makes a quick dish but I wanted to add a little something extra. This Skillet Tuna Penne is a creamy, easy dish that is a great change of pace from regular tuna casserole, and it smells amazing! Ingredients: 

1 lb penne pasta

1 16 oz can young or small peas

2 tablespoons butter

2 tablespoons flour

2 cups whole milk

Salt and pepper

1 tablespoon garlic powder

1 cup cheddar cheese, shredded

2 (6 oz) cans tuna, drained and flaked

1/4 cup grated Parmesan cheese

Instructions:

1) In a large pot of salted water, cook penne to al dente according to package instructions. With one minute left of cooking, add the peas to the water. Drain and set aside.

2) In a large skillet on medium heat, melt butter. Whisk in flour until combined. Whisk in milk and stir till smooth. Bring to a simmer and whisk continuously to prevent burning.

3) Once sauce has thickened, add garlic powder and the salt and pepper to taste. Remove from heat and add the cheddar. Stir till combined and melted. Add in the tuna and mix well.

4) Add in the drained penne and peas and combine. Top with Parmesan and serve.

    Super! Used mild colby jack, which blended very nicely and didn’t overpower the tuna. Perfect!

      Oh, and I also used frozen, cooked peas instead of canned.
