Ingredients:
1/2 lb jalapenos (about 12 peppers)
4 oz cream cheese
2 tablespoons Cajun seasoning
8 slices bacon, cut in half
1/4 cup shredded cheddar cheese
Instructions:
Preheat oven to 400 degrees F. Wearing gloves, halve jalapenos and deseed. Set aside.
In a medium bowl, mix the cream cheese,cajun seasoning and cheddar until well combined. Stuff each pepper with 2 tablespoons of the cream cheese mixture. Wrap with a half slice of bacon and secure with a toothpick.
Place on a baking sheet and cook for 20-25 minutes until bacon is browned. Let cool for 5 minutes before serving.
