Jalapeños seem to be everywhere lately, and for good reason. They can be used for many things and poppers are the classic go-to dish for many. Now I have had some delicious poppers and decided to liven up some chicken with the mix! I made this with salsa instead of cream cheese to lighten the calorie load a bit. If you want to lessen the spice punch a little bit you can substitute the pepper jack cheese with some mozzarella or cheddar. This is easy to put together and the perfect dish for someone who loves a lot of spice in their life! I served this with a side of Roasted Red Potatoes!
Ingredients:
4 boneless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
Salt and pepper
1/4 cup salsa
1/2 cup chopped bacon
1/2 cup chopped jalapeños
1/2 cup shredded pepper jack cheese
Instructions:
1) In skillet, cook bacon pieces till crispy. Scoop out and set aside.
2) Preheat oven to 375 degrees. Combine olive oil, garlic powder, salt and pepper in a bowl and rub down the chicken breasts.
2) Place chicken on foil lined baking sheet and spoon salsa over the top.
4) Sprinkle the top with bacon, jalapeños and cheese. Bake for 30 minutes until chicken is done and 165 in the middle.
