This was an experiment I decided to try out. My husband LOVES chicken pot pie and I decided to make it for him one day. But I decided to use leftover Chicken Chili instead of cooking an whole new chicken to shred. So I made a spicy, Mexican themed version of pot pie that went over extremely well.
