I love this Chicken Scallopini and it is a perfect recipe for any night of the week. The thin sliced chicken cooks up nice and evenly in the pan and the lemon and butter crisp up and give incredible flavor!
4 thin sliced, skinless, boneless chicken breasts
1 tablespoon olive oil
2 tablespoons butter
2 cups Italian seasoned breadcrumbs
1) In large skillet, heat oil and 2 tablespoons of butter on medium heat.
2) Coat chicken in breadcrumbs and sauté in skillet, turning until brown and cooked through. Remove chicken from pan and serve with lemon garnish.
