Tomato Basil Pasta

I love easy pasta dishes. They are perfect for a quick dinner that doesn’t look like it’s phoned it. This pasta mixes a deliciously quick and simple mix that coats the pasta perfectly and tastes amazing! Tomato and basil go perfectly together and the addition of garlic makes you feel like you have a little bite of bruschetta in your mouth! I cooked the tomatoes till bursting to make an extra explosion of flavor! I recommend this for any night of the week and you can use any pasta that you wish for a delicious meal for the whole family. 

Ingredients:

2 cups grape tomatoes

1/4 chopped basil

2 cloves garlic, minced

3 tablespoons olive oil

1 cup shredded mozzarella cheese

10 oz spaghetti

Salt and pepper

Instructions:

1) Bring a large pot of salted water to a boil and cook pasta to package directions. In a small skillet, cook the tomatoes for a few minutes until they soften and begin bursting.

2) In a bowl, mix the tomatoes, basil, garlic, olive oil, salt and pepper. Let sit while pasta cooks.

3) Drain pasta and return to pot. Add the tomato mixture and toss to evenly coat. Topped with freshly grated Parmesan. Serve immediately.

One Pot Tomato Pasta

Ingredients
