Caprese Baked Chicken

I love anything caprese! Something about the mix of tomatoes, fresh mozzarella and balsamic vinegar makes for a truly flavorful, amazing dish. This recipe came out perfect in that the vinegar added just the right amount of extra flavor and the chicken cooked up nice and even. If you don’t like your tomatoes cooked, you don’t have to add them to the baking dish but I found that roasting them made them sweeter.  Continue reading “Caprese Baked Chicken”
