Chicken Pot Pie Potato Skins

I know you have a hectic week. Whether it’s planning to cook a big meal or deal with a ton of travel congestion, this is a busy time. So lets talk about comfort food. Chicken Fajita Quesadilla

A quesadilla can be filled with so many different options and fajitas are one of them! I loved how easy this came together. Jalapeno Popper Smothered Chicken

Jalapeño Popper Smothered Chicken

Jalapeños seem to be everywhere lately, and for good reason. They can be used for many things and poppers are the classic go-to dish for many. Now I have had some delicious poppers and decided to liven up some chicken with the mix! I made this with salsa instead of cream cheese to lighten the calorie load a bit. If you want to lessen the spice punch a little bit you can substitute the pepper jack cheese with some mozzarella or cheddar. This is easy to put together and the perfect dish for someone who loves a lot of spice in their life! I served this with a side of Roasted Red Potatoes! This recipe is the perfect mix of tangy, sweet and spicy! We made these on one of our last warm weekends and they were perfect. The chicken cooked up with a nice char and the peppers and sauce added a ton of flavor. We really loved the way that these came out and had zero leftovers for this meal! These were cooked on medium low heat directly on the grill. If you use a grill pan on your stove, make sure you keep an eye on them so they don’t burn.  Continue reading “BBQ Bacon Chicken Kabobs”
