We all have those nights. The ones where plans run late, traffic is insane and the weather is horrible. Then you need to run out again for your kids practice or lesson. The last thing you want to do is spend a lot of time cooking when all you want to do is put on some leggings and sit down. This is a great meal for one of those nights. Let your crockpot do the work. You throw this in and it’s ready to eat by the time you get home!
Ingredients:
1 egg
Salt and pepper
1 cup cheddar cheese, shredded
1/2 cup plain breadcrumbs
2 tablespoons onion powder
1 lb ground beef
1/4 cup tomato paste
1/4 cup brown sugar
Instructions:
1) Spray bottom of crockpot with cooking spray.
2) In a medium bowl, mix beef, egg, salt, pepper, onion powder, breadcrumbs and cheese until well combined. Form into a loaf and place in slow cooker.
3) In a small bowl, whisk the tomato paste and brown sugar. Pour over the top of meatloaf.
4) Cover and cook on low for 4-6 hours or on high for 2-3 hours.
