Meatloaf with mashed potatoes is a classic dish. It’s one of those comfort foods that is a go-to for anyone looking for an easy meal. But sometimes that can get a little boring. These Meatloaf Cupcakes change all that! Not only are they just as easy to make as your regular meatloaf, but they are a fun twist that will make it a dish everyone will want to try! This is a perfect way to get a picky child to try something new.
Ingredients:
1 lb ground beef
1 egg
1 cup cheddar cheese, shredded
1/4 white onion, chopped
1 cup plain breadcrumbs
Salt and pepper
1 tablespoon garlic powder
2 tablespoons Worcestershire sauce
2/3 cup ketchup
1/4 cup brown sugar
2 cup mashed potatoes
Instructions:
1) Preheat oven to 350 degrees. If you do not have leftover mashed potatoes, prepare some, check out this easy recipe here. Set aside.
2) In a large bowl combine the ground beef, egg, cheddar, onion, breadcrumbs, salt, pepper, garlic powder and Worcestershire sauce. Spray a cupcake pan with cooking spray and make equal balls of the beef mixture. Place into the pan and press down to fill the holes.
3) In a small bowl, whisk the ketchup and brown sugar and spoon onto the top of each cupcake.
4) Bake for 35-40 minutes. Allow to cool for 5 minutes then spoon the mashed potatoes on top. Serve immediately.
