What to Do with Used Cooking Grease

Is your first impulse after using cooking oil to toss it? Resist it: There are other things you can do with used cooking grease.

For starters, cooking oil can often be re-used—for sauteing other dishes, as an addition to things like vinaigrettes, for example. But before you figure out if you can re-use cooking oil, you have to understand when this ingredient starts to break down, which is called the smoke point.
