I’ve had an idea to make these since I made my Twice Baked Potatoes and they turned out so delicious. I knew they could be amazing with sweet potatoes too. These are so yummy! I wanted to write this up before Thanksgiving but decided that Christmas dinner would be a great time to put this up. They bake up nice and soft and mix perfectly with the marshmallows. This would be great with your holiday dinner! I got rave reviews at Thanksgiving and knew I had to make them again.
Ingredients:
4 large sweet potatoes
1/4 cup butter
2 tablespoons milk
2 tablespoons brown sugar
1/4 tablespoon cinnamon
2 cups mini marshmallows
Instructions:
1) Preheat oven to 425 degrees.
2) Cut potatoes lengthwise in half. Take a large baking sheet and cover with foil. Spray it down with cooking spray and put the potatoes cut side down onto the baking sheet. Bake for 45 minutes. Set oven to broil.
3) Once the potatoes are cool enough to handle, scoop out the centers into a large bowl. Leave about 1/4 inch of potato left on the sides.
4) Add butter, milk, brown sugar and cinnamon to the bowl and mix well with potato mash. Refill the potato skins with the mixture. Top with marshmallows. Broil for 5 minutes until marshmallows are browned and melty.
