Turkey Stuffed Peppers

I love easy dinners. Don’t get me wrong, I’m down with roasting a turkey or something but it’s nice to have things in your back pocket that are easy to throw together. This is great for those nights when soccer practice runs late and you were stuck in traffic but you still want a hot meal in the kids before bedtime. By the time the kids are washed up and at the table, this will be ready to go! 

Since you are using turkey instead of beef, this is a healthier option since you are cutting down on the fat. You can also remove the cheese to remove more fat if you want.

Ingredients:

3/4 lb ground turkey

1 can black beans (16 oz)

1 package taco seasoning

2 tablespoons garlic powder

1 tablespoon cumin

1/2 onion, chopped

3 red or yellow peppers

1/2 cup shredded cheddar

 

Instructions: 

1) In a large skillet, cook the onions on medium high heat till translucent. Add turkey and cook till browned.

2) Season with garlic powder, cumin and taco seasoning. Simmer for 5 minutes.

3) Cut peppers in half and remove seeds and stem. Turn on broiler.

4) Fill peppers with turkey mixture and top with some cheese. Place under broiler and heat for 5 minutes until cheese is nice and melted. Top with sour cream if you want and serve.
