I’ve had an idea to make these since I made my Twice Baked Potatoes and they turned out so delicious. I knew they could be amazing with sweet potatoes too. These are so yummy! I wanted to write this up before Thanksgiving but decided that Christmas dinner would be a great time to put this up. They bake up nice and soft and mix perfectly with the marshmallows.
