Pork Enchiladas

I loved how delicious these Pork Enchiladas came out. They cook up easily and will be a hit with your dinner table. The secret I discovered is to take your pork and fry it up in the skillet for a few minutes before putting in the tortilla. It will give the pork some extra flavor and you can taste it in the enchilada! I used some leftover pulled pork for this and it made this recipe so much easier to make since the ground work was already done. Lumpia

Happy New Year! Hope you all had a wonderful holiday season. Starting 2019 with something new. Saw this recipe for pork and vegetables lumpia and wanted to try it out for the longest time so I finally found the time to do it. Absolutely love them! The crispy crunch of the outside goes perfectly with the flavorful filling and gives you that satisfying, hit the spot feeling you love after a good dish. They were such a hit that my picky eater child raved and said he wanted more!

Caramelized Pork

I scored at the grocery store and ended up with a ton of pork butt for a great price. Now I had to figure out what to do with it. I could do the classic Pulled Pork but I wanted to switch it up. I had seen caramelized pork with a more Asian twist but as I am not super knowledgeable in Asian themed cooking, I mixed it up and tried it out my way. I didn’t have fish sauce or coconut water but I used some chili powder and garlic to give the meat some flavor to blend with the sweet caramel.
