Pork Enchiladas

Pork Enchiladas

I loved how delicious these Pork Enchiladas came out. They cook up easily and will be a hit with your dinner table. The secret I discovered is to take your pork and fry it up in the skillet for a few minutes before putting in the tortilla. It will give the pork some extra flavor and you can taste it in the enchilada! I used some leftover pulled pork for this and it made this recipe so much easier to make since the ground work was already done. Try these Pork Enchiladas and you won’t be disappointed!  Continue reading “Pork Enchiladas”

Oven Baked Pulled Pork

oven baked pulled pork

This oven baked pulled pork is the perfect way to spend a free day. This makes a big batch that you can store for the week for your favorite recipes! Whether it’s enchiladas or sandwiches, having your pork already shredded and ready to go will save you tons of prep time later in the week. I sometimes make this in the crockpot, but this version comes out nice and moist too and the dutch oven holds more meat over my slow cooker. Keep this recipe on hand for anytime you want easy oven pulled pork demand. Continue reading “Oven Baked Pulled Pork”

Crockpot Creole Chicken

Crockpot Creole Chicken

I love how this recipe turned out! This Crockpot Creole Chicken is literally loaded with chicken. Instead of the usual pork sausage, I decided to cut down on the fat a bit by using Al Fresco chicken sausage. It comes in tons of different varieties so you can get the perfect flavor you love, (This isn’t a sponsored post, I just really love their chicken sausage). If you want a more authentically Creole flavor, try some andouille sausage. This is a great meal to make to pack for the week as lunch, this reheats very well so it won’t feel like leftovers when you enjoy it again! This Crockpot

Crockpot Creole Chicken is your new go-to easy meal. If you’d like another easy crockpot meal try our cockpot baked ziti. Continue reading “Crockpot Creole Chicken”
