I love making asparagus as it is so easy to prepare and use for so much. I usually make Parmesan Roasted Asparagus and it always comes out perfect but asparagus is one of my husband’s favorite sides and when he came home from the store with a big batch of fresh asparagus and some lemons, I knew exactly what he was looking for. Lemon is a great summer fruit because it gives a freshness to everything and it goes perfectly with garlic so you know that this is a match. Caramelized Pork

I scored at the grocery store and ended up with a ton of pork butt for a great price. Now I had to figure out what to do with it. I could do the classic Pulled Pork but I wanted to switch it up. I had seen caramelized pork with a more Asian twist but as I am not super knowledgeable in Asian themed cooking, I mixed it up and tried it out my way. I didn’t have fish sauce or coconut water but I used some chili powder and garlic to give the meat some flavor to blend with the sweet caramel. Now that it’s the start of a new year, I’m seeing new diets all over the place. The big one that’s getting a lot of attention is the Keto diet.
