I don’t know about you but tacos are big in my house. They are a go-to recipe for whenever I want something easy and delicious! I came up with this one night when I had some ground beef and a box of macaroni that I wanted to use so I did a quick ingredient check and came up with this delicious meal. The beef and beans worked perfectly with the pasta and made it a very filling meal.
Ingredients:
1 lb ground beef
1 box, 16 oz, elbow macaroni
1 tablespoon onion powder
1 tablespoon garlic powder
1 package taco seasoning
1/3 cup water
Salt and pepper
1 15 oz can black beans, drained
1 15 oz can corn, drained
1 cup sour cream
3 cups shredded cheddar
Instructions:
1) Preheat oven to 350 degrees. In a large pot of boiling water, cook elbow macaroni to package instructions till al dente. Drain and set aside.
2) Heat a large skillet to medium high heat and cook the ground beef till brown. Add the garlic powder, onion powder, salt and pepper while cooking. Once browned, add the water and taco seasoning, mix well and simmer for a few minutes until thickened.
3) Mix the noodles, ground beef, black beans, corn,sour cream and half the cheddar up well and pour into a casserole dish. Cover with foil and bake for 30 minutes. Uncover, add the remaining cheese on top and bake for 15 more minutes uncovered.
