Taco Mac and Cheese

Now I know that a big discussion around Thanksgiving is how you make mac and cheese. The purest in me says that you go traditional and do the classic, original Baked Macaroni and Cheese but if you want to do something fun that mixes the best of two classic dishes, then this Taco Mac and Cheese is the way to go! 

Ingredients: 

1 tablespoon olive oil

1 lb ground beef

1 packet taco seasoning

1/2 white onion, diced

3 cloves garlic, minced

1 can black beans, drained

1 can kidney beans, drained

1 can diced tomatoes, drained

4 cups chicken broth

1 box elbow macaroni

2 cups cheddar, shredded

Instructions: 

1) In a large pot or dutch oven, heat olive oil over medium high heat and cook ground beef till browned.

2) Add onion and garlic and cook for 3 minutes. Add taco seasoning according to package directions and simmer for a few minutes till thickened.

3) Add beans, tomatoes, chicken broth and macaroni. Stir and bring to a boil, then reduce to a simmer, cover and cook for 10-12 minutes until pasta is cooked.

4) Stir in one cup of cheese, top the pasta with remaining cheese, cover and let the cheese melt. Then stir again to combine. Serve immediately.
