Strawberry Banana Bread

Strawberries and summer seem to go together hand-in-hand, and if you are somebody who goes and picks your own then you can end up with a huge amount that you need to use before they go bad. Now you can do a jam but some Strawberry Banana Bread is a delicious way to use them! The strawberries mix perfectly with the bananas and give the bread an extra sweet bite. I would highly recommend this as it always comes out perfectly!

Ingredients:

1/4 cup butter (1/2 stick), softened

1/2 cup granulated sugar

1 egg

2 ripe bananas

1 cup flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup fresh strawberries, chopped and tossed with flour

Instructions:

1) Preheat oven to 375 degrees. Coat one loaf pan with spray.

2) In a large bowl, mix the butter and sugar. Add egg and combine. Add bananas and mix well again.

3) Add flour, baking soda and salt. Mix and fold in strawberries.

4) Pour batter into pan and bake for 15 minutes. Lower temperature to 350 degrees and continue baking for another 30 minutes. Do the toothpick test to make sure it’s done and let cool completely before removing from pan.
