Spinach and Tomato Tortellini

Spinach and Tomato Tortellini

This dish is so delicious! The sauce comes out perfectly and mixes so well with the tortellini and it made my house smell fantastic! I could have eaten three plates of this is was so good, definitely something to try if you are looking for something different on pasta night. I used frozen spinach for this, that I drained well but you can also use fresh spinach as well. 

Ingredients: 

1 package cheese tortellini

2 tablespoons butter

2 cloves garlic, chopped

2 tablespoons flour

1 tablespoon onion powder

2 cups whole milk

1 can diced tomatoes

1 cup frozen spinach, thawed and pressed of excess water

3 tablespoon basil

2 tablespoons oregano

Salt and pepper

1 cup mozzarella, shredded

Instructions: 

1) Cook tortellini according to package instructions. Drain and set aside.

2) In a large skillet, melt butter over medium heat. Add garlic and cook for 1 minute till fragrant. Add flour and onion powder and whisk till well combined. Slowly whisk in milk. Bring to a simmer and add tomatoes, spinach, basil and oregano. Simmer till thickened.

3) Add mozzarella, salt and pepper and stir until melted and combined. Pour sauce over tortellini and mix well. Serve with parmesan cheese.
