Skillet Nachos

Now that we are knee deep into football season, there is always a need for easy to prep foods for watching the game and you can’t get much easier than these Skillet Nachos. It’s one pan and super easy to make! I used tomatoes and avocado as my toppings but you can use whatever you like, sour cream or guacamole would be awesome on top of this too. Also, if you are looking for a little more spice you can substitute the cheddar for some pepper jack instead! 

Ingredients:

1 bag tortilla chips

1 lb ground beef

1 16 oz can black beans

1 package taco seasoning

1 cup shredded cheddar

Diced tomato and avocado for topping

Instructions:

1) Preheat oven to 350 degrees.

2) In a cast iron or other oven friendly skillet, cook ground beef till browned. Add black beans and taco seasoning and simmer for 3-4 minutes. Pour into a large bowl and set aside. Wipe out the skillet.

3) In the same skillet, make a layer of tortilla chips. Top with ground beef mixture and top with cheese. Repeat again.

4) Place skillet in oven and bake for 15 minutes till cheese has melted. Top with tomatoes and avocado and serve.
