Spicy Pollack Skillet

If you love white, flaky fish, then you will love this Spicy Pollack Skillet. The fish cooks in a seasoned sauce and comes out perfect. The beans, fire roasted tomatoes and cumin give it a southwestern flavor that will make you want more as it smells delicious. I used fresh pollack for this but if that is hard for you to get, you can use frozen or another white fish like tilapia or cod. If you are looking for more fish recipes, check out our Honey Lime Tilapia or my Grilled Mahi Mahi with Corn and Avocado Salad. Easy Pork Marinade

I love recipes that are easy to throw together and this recipe for an Easy Pork Marinade is just that. This recipe has ingredients that I always have on hand so it’s a perfect last minute dinner solution. If you want to plan ahead and have your pork marinate even longer, you can also do that but this adds flavor no matter how long you let it sit. It also gives a nice char to the chops so you can really enjoy this. I made this with my Roasted Red Potatoes and a side of green beans. Continue reading “Easy Pork Marinade”

Spinach Ricotta Penne

I love how creamy and rich the sauce on this recipe came out. Not only was is delicious but it clung to the penne perfectly so every bite gives you flavor. This Spinach Ricotta Penne is a perfect comfort food recipe when you want some flavor but still get your vegetables. I love using spinach in recipes because it’s so versatile and this dish is no different. The ricotta makes the sauce very thick so save a bit of pasta water so thin it out if you need to.  Continue reading “Spinach Ricotta Penne”
