Sausage and Gnocchi Soup

This is a perfect soup for a cold day. It’s full of yummy ingredients and it’s hearty. I couldn’t even finish a whole bowl it filled me up so well. This is also a different way to use your gnocchi that everyone will love! 

Ingredients: 

1 lb ground sausage

1/2 white onion, diced

1 roasted red pepper, diced (see how to make homemade ones here)

4 cloves garlic, chopped

2 cans diced tomatoes, seasoned with basil and oregano and drained of extra liquid

4 cups chicken broth

1 lb gnocchi (see here)

2 cups frozen spinach, thawed and squeezed dry

3/4 cup whole milk

Salt and pepper

 

Instructions: 

1) In a dutch oven or soup pot, brown the sausage. Remove from pot and set aside. In the leftover oil, add onion and cook on medium-low heat for a few minutes. Add red pepper and keep cooking till tender.

2) Add garlic and diced tomatoes. Saute till well mixed and fragrant.

3) Add sausage and chicken broth. Lower to simmer and add salt and pepper. Simmer for 20 minutes.

4) Add gnocchi and spinach and cook for another 10 minutes till the gnocchi starts floating. Add milk and simmer for another 5 minutes. Serve immediately with some crispy French bread.
