Summer time equals BBQ time and that means potato salad. This salad is super easy and can be served hot or cold so you can prep it ahead or just make it and go! It’s got a tangy flavor and tastes amazing! It will be the perfect side for any summer party.
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon dijon mustard
1 tablespoon garlic powder
1 tablespoon olive oil
1 tablespoon apple cider vinegar
1 tablespoon onion powder
2 tablespoons pickle juice
Salt and Pepper
2.5 lbs red potatoes, scrubbed and quartered
1) In a large pot, place potato wedges and cover with water. Cook over medium high heat until tender, about 15 minutes. Drain.
2) In a large bowl, mix together mayonnaise, sour cream, dijon mustard, garlic powder, onion powder, olive oil, vinegar, pickle juice and salt and pepper.
3) Add potatoes and toss to coat. Serve warm or refrigerate for 2-3 hours till cold.
