I am a huge fan of easy things to make. If you are making a big main dish, you want your side to not be hugely time consuming. These Layered Skillet Potatoes hit all points. This dish is a huge hit! It’s very easy and flavorful. The first time I made it, I got complements right out the gate. The potatoes get a nice crisp to it and are packed with flavor! The garlic and herbs mix together for a big punch and the skillet makes for an easy prep and cook meal. This is a great recipe if you have extra potatoes and have no idea what to do with them!
Ingredients:
4 or 5 red potatoes, scrubbed
2 garlic cloves, chopped
1 tablespoon basil
1 tablespoon oregano
Salt and pepper
1/2 cup butter, cut into pieces
1/4 cup grated parmesan
Instructions:
1) Make sure your cast iron is well seasoned. You can find tips to do that here. Preheat oven to 375 degrees.
2) Slice potatoes to desired thickness and layer in the pan until the pan is completely covered.
3) Sprinkle garlic and seasonings over the top. Dot butter all over.
4) Cover pan with tin foil and bake for one hour. Remove foil, add cheese and bake for another 20 minutes until crispy.
